Arugula is native to the Mediterranean east to Turkey and northern India, where it grows on dry, disturbed ground. Arugula, Eruca sativa, is a spicy green mustard family also known as rocket, or Italian cress. It has been cultivated at least since Roman times (and is still common in Italian cuisine), and the seeds were once used in aphrodisiac concoctions. It is a seasonal, and all year round growable crop, grown like lettuce or spinach, for use raw in salads, cooked as an spicy kick in a variety of dishes, and used as a healing tea.

Brewing microgreens infuses the water with essential vitamins and minerals. The longer the microgreen leaves are steeped for, the more nutrients will be released. You can also over-steep your teas for more of the antioxidant properties. Adding a slice of lemon also helps for a more nutritious tea. Low pH water (acidic) supports a more effective nutrient extraction from the microgreen leaves than high pH (basic) water. Most tap waters have a pH of around seven, which is neutral, so it can be beneficial to add a slice of lemon in your tea.
